What is butterfly pea flower (Aparajita)?
Butterfly pea flower is the indigo blue flower of Clitoria ternatea, a climbing liana from Southeast Asia. In India she is called Aparajita, the invincible. Infused in warm water, she releases a deep blue that turns pink as soon as lemon is added.
What are the uses of butterfly pea flower?
She mainly serves as a soft infusion and a vibrant plant colourant for drinks, rice and pastries. Ayurveda ranks her among the Medhya, the plants traditionally dedicated to clear memory and intellect. Her signature remains beauty, colour and play more than effect.
How do I prepare a butterfly pea blue tea?
Dissolve a teaspoon of Aparajita powder in a little simmering water (around 90°C, never violently boiled), then lengthen with warm water or plant milk. The indigo blue appears. A drop of lemon turns her pink-violet before your eyes.
Why does butterfly pea tea change colour?
Because of anthocyanins, pigments whose structure rearranges according to pH. In neutral environment the flower is blue, in acid environment (lemon, vinegar) she turns pink, in basic environment (bicarbonate) turquoise green. The same water, three colours according to what is given to her.
Does butterfly pea flower contain caffeine?
No. Butterfly pea infusion is caffeine-free and almost calorie-free, making her an evening or after-meal drink, and an infusion suited for children for the colour workshop.
Aparajita and Shankhpushpi, are they the same plant?
Not always. The name Shankhpushpi (conch-shaped flower) designates, according to Ayurvedic lineages, either Clitoria ternatea (Aparajita) or Convolvulus pluricaulis, two distinct plants. INFUSE works only with Clitoria ternatea, the blue flower. Verify the botanical identity before any purchase elsewhere.
Can pregnant women drink butterfly pea?
As a precaution, avoid during pregnancy. Uterostimulant activity at high doses is reported in some cultures, without reliable traced source. When in doubt, in breastfeeding or on anticoagulant treatment, ask a healthcare professional for advice.

Our flowers come from Sri Lanka, wild-harvested by a small family business that also cultivates lotus and water lilies in vast marshes. Quality control is carried out in France. Lot and supply details are in process of confirmation.
